Coconut Milk Sorbet

I always make food that I craved for... And this dessert is one of them... I just love this sorbet so much... It's creamy and enjoyable to eat during super hot season... It's cheap and easy to make... Enjoy!!!

Pandan leaves and coconut milk

Add sugar and bring it to boil

Discard the pandan leaves and pour the mixture into a container

Freeze it overnight and it's ready to serve!

Recipe for Coconut Milk Sorbet (serves 2)

Ingredients:
- 100ml of coconut milk
- 300ml of water
- 20g of white sugar
- sweetened creamy corn paste
- crushed peanuts
-2 stalks of pandan leaves

Steps:
- Clean the pandan leaves and tie them into a knot.
- Add coconut milk, sugar and water into a pot. Stir well and bring it into boil.
- Once it's boiled, set it aside and let it cool.
- Pour the mixture into a container and let it freeze for a few hours.
- Mix the semi-frozen mixture once in every 2 hours to prevent big chunks of icicle forming.
- Once you got the consistency that you like, leave it to freeze overnight.
- When ready to serve, scoop the sorbet out from the container and sprinkle peanuts and add sweet corn paste.
