Matcha Ice Cream Recipe

I got my hands on Green Tea powder from local bakery shop last week and I decided to make matcha ice cream! It's a perfect dessert to have on a super hot day... 

To make this:

- 2 cups of milk
- 4 tbs of sugar
- 1 cup of whipping cream
- 6 egg yolks
- 2 tbs of matcha powder


1. Thoroughly mix egg yolk and sugar and set aside.

2. Mix green tea powder + 1/4 milk + 1/2 whipping cream. You will notice that green tea powder will not be entirely dissolved. That's okay.

3. Pour the rest of the milk and whipping cream into a pot. Add in the green tea paste.
Heat it in medium hot and stop cooking right before it reaches boiling point. Keep on string till all clumps are dissolved.

4. Pour the milky green tea mixture into egg mixture by portion. Mix well. Once they are fully incorporated, transfer them back into the pot and cook under medium heat.

5. Cook till it thickens.

6. Finally pour the mixture into a pan and cool it down to room temp.
Once cooled, transfer the pan into freezer. 
Occasionally stir the mixture in the pan every 2 hours to prevent crystallization.

 That simple!
